Nuts provide the source of fibre, antioxidants and the ALA from walnuts for some of the omega oils needed.

The combination of ingredients, cocoa and berries give an uplift in polyphenols and antioxidants.

Ingredients

  • 400g dark chocolate (70% minimum)

  • 600g mixed nuts (almonds, walnuts, cashews, pecan and brazil nuts)

  • 100g goji berries

Preparation

Step 1

Roast the nuts at 180°C for 10-15 minutes ensuring you keep mixing throughout to toast evenly until lightly browned

Step 2

Meanwhile, melt the chocolate (microwave or in a bowl resting above a pan of simmering water).

Step 3

Cool the roasted nuts and break into even pieces, spread across a sheet of baking paper to form a rectangle.

Step 4

Pour the chocolate evenly across the nuts and sprinkle over the goji berries.

Step 5

Refrigerate for 30-45 minutes and serve as one large bar for people to break off pieces to feast on.
