About the Recipe
Rich in protein, flavanols, phyto-oestrogen and plants this is a great Indian brunch dish to have as a staple addition to the table

Ingredients
2 tbsp olive oil
2 stalks celery (diced)
1 tomato (diced)
1 bell pepper (diced)
½ tsp celery salt
½ tsp black salt
½ tsp turmeric powder
½ tsp chilli powder
1 tsp ginger (minced)
350g extra-firm tofu (crumbled)
1 tbsp nutritional yeast
2-3 stems of coriander (chopped)
½ lime (juice)
Preparation
Sauté the spices and ginger with the tomato, pepper and celery until softened
Add the crumbled tofu and cook for 2-3 minutes
Cook for a further few minutes before stirring through the nutritional yeast, coriander leaves and stems with lime juice
Serve half with a slice of wholegrain bread or rye bread with sides of your choice (grilled tomatoes, mushrooms, ½ tin baked beans and ½ avocado)
