Tofu Scramble

About the Recipe

Rich in protein, flavanols, phyto-oestrogen and plants this is a great Indian brunch dish to have as a staple addition to the table

  • 2 tbsp olive oil

  • 2 stalks celery (diced)

  • 1 tomato (diced)

  • 1 bell pepper (diced)

  • ½ tsp celery salt

  • ½ tsp black salt

  • ½ tsp turmeric powder

  • ½ tsp chilli powder

  • 1 tsp ginger (minced)

  • 350g extra-firm tofu (crumbled)

  • 1 tbsp nutritional yeast

  • 2-3 stems of coriander (chopped)

  • ½ lime (juice)


  1. Sauté the spices and ginger with the tomato, pepper and celery until softened

  2. Add the crumbled tofu and cook for 2-3 minutes

  3. Cook for a further few minutes before stirring through the nutritional yeast, coriander leaves and stems with lime juice

  4. Serve half with a slice of wholegrain bread or rye bread with sides of your choice (grilled tomatoes, mushrooms, ½ tin baked beans and  ½ avocado)
