Walnut Pate

About the Recipe

This paté can rival that of one favoured by carnivores. It has a great texture and flavour profile to compliment conserves, cheese and crackers. One to try as an addition to those that want some comfort food or something different as part of the snacking board.

Walnuts provide omega oils in the form of ALA but also a positive impact on the gut bacteria by increasing butyrate production – beneficial for colonic health as well as reducing the amount of secondary bile acids that are created by the microbiome; known to be harmful to the gut.


  • 75g walnuts

  • 25g shiitake mushrooms

  • 2 ½ tbsp nutritional yeast

  • 2 ½ tbsp corn starch

  • 2 ½ tbsp soy sauce

  • 2 tbsp lemon juice 

  • 1 tsp miso paste

  • ⅓ tsp garlic powder

  • ⅓ tsp onion powder

  • ⅓ tsp smoked paprika

  • ⅓ tsp dried oregano or sage

  • Black pepper (pinch)


Step 1

Blend all the ingredients in a processor until smooth.

Step 2

Cook the mixture on a medium heat in a shallow pan until the mixture starts thickening.

Step 3

Place the mixture into shallow ramekins or bowls and leave to set cool and set in the fridge for 30 minutes minimum.

Step 4

Serve and enjoy.
